Ingredients

For the Roasted Herb Tomatoes and Garlic:

  • 3–4 lbs. ripe organic tomatoes, cut into wedges
  • 2 whole garlic bulbs

For the Soup Base:

  • ½ onion, chopped
  • 1 Tbsp extra virgin olive oil
  • 1 ½ cups organic heavy cream (or see vegan option below)
  • 2 cups organic vegetable stock
  • 4 Tbsps organic tomato paste
  • 1 tsp sea salt (plus more to taste)
  • 1 tsp On Everything All-Purpose Blend (see below make your own)
  • ½ tsp smoked paprika

Make Your Own All-Purpose Blend:
Mix together the following…

  • 1 tsp sea salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp dried parsley

How to Roast the Tomatoes + Garlic

Roast the tomatoes and garlic bulbs (cut tops off, drizzle with olive oil, wrap in foil) in the oven at 200°C until blistered and aromatic, around 30–40 minutes.

How to Make the Soup

Blend It All Together:
In a medium Dutch oven over medium heat, warm the olive oil. Add chopped onion and sauté for 1–2 minutes until translucent and fragrant.

Transfer sautéed onion to a high-powered blender along with:

  • Roasted tomatoes
  • Garlic (squeeze the roasted garlic from the bulbs)
  • Tomato paste
  • Vegetable stock

Blend on high until smooth and velvety. (Optional: Set aside a few roasted tomato wedges for garnish.)

Simmer and Finish:
Return the blended mixture to your pot. Stir in:

  • Heavy cream
  • Sea salt
  • All-Purpose Blend
  • Smoked paprika

Bring to a boil for 1–2 minutes, then reduce heat to low and let simmer for 5–6 minutes until thickened.

Serve and Enjoy:
Ladle into bowls, top with reserved roasted tomatoes (if using), and serve with grilled cheese on the side for the ultimate cozy meal.
