Ruby Chocolate Matcha Cookies

These soft and chewy matcha cookies are packed with chunks of ruby chocolate, giving them the perfect balance of earthy matcha flavour and fruity sweetness. Finished with flaky sea salt, they’re the ultimate sweet treat.

Ingredients

  • 165 g plain flour
  • 2 tbsp cornflour
  • 1 tbsp culinary-grade matcha powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 115 g unsalted butter, melted
  • 135 g caster sugar
  • 110 g light brown sugar
  • 1 large egg, room temperature
  • 1½ tsp vanilla extract or vanilla bean paste
  • 170 g ruby chocolate, roughly chopped
  • Flaky sea salt, for topping

Method

  1. In a medium bowl, whisk together the flour, cornflour, matcha powder, baking soda, and salt
  2. In a large bowl, whisk the melted butter, caster sugar, brown sugar, egg, and vanilla until smooth and well combined.
  3. Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms. Fold through the chopped ruby chocolate.
  4. Cover the bowl and chill the dough in the fridge for at least 30 minutes.
  5. Preheat the oven to 180°C bake and line a large baking tray with baking paper.
  6. Scoop portions of dough onto the tray using a small cookie scoop or tablespoon, leaving about 5cm between each cookie.
  7. Bake for 10–12 minutes. The cookies may still look slightly underbaked in the centre, but they will continue to set as they cool.
  8. Once removed from the oven, gently tap the tray on the bench to create a flatter, crinkled cookie texture.
  9. Sprinkle with flaky sea salt and enjoy!
