Addictive Fluffy Maple Flatbreads

These Canadian street food classics are a delicious fried dough treat, crispy on the outside, fluffy inside, and topped with a rich maple glaze. After trying one in Canada, we had to recreate it at home!
This recipe uses NZ-friendly ingredients and metric measurements, so you can bring a bit of Canadian comfort food to your kitchen. Perfect for dessert, a fun weekend bake, or when you’re simply craving something next-level.

Ingredients
For the Dough:
- 2 tsp instant yeast
- 180 ml warm water
- 120 ml warm full-fat milk
- 1 Tbsp white sugar
- 1 tsp salt
- 375 g plain flour (all-purpose)
- 1 Tbsp unsalted butter, melted
- Neutral oil for frying (vegetable or canola)
For the Maple Glaze:
- 60 g unsalted butter
- 1 tsp vanilla extract
- 3 Tbsp maple syrup
- 60 g icing sugar (sifted)
Make the Dough
- In a large bowl, combine the warm water and milk. Sprinkle over the yeast and whisk gently.
- Add in sugar, flour, and salt. Mix until a dough forms.
- Knead using a stand mixer with a dough hook (or by hand) for about 1–2 minutes until soft and elastic. The dough should be smooth but not sticky.
- Lightly oil a clean bowl and transfer the dough in. Cover with cling film and a tea towel, and place somewhere warm. Let rise for about 1 hour or until doubled in size.
Prepare the Maple Glaze
- In a small pan over medium heat, melt the butter and continue cooking for 5–6 minutes until golden brown and nutty (but not burnt). Remove from heat.
- Stir in vanilla, maple syrup, and sifted icing sugar. Mix until smooth and glossy. Set aside.
Shape & Fry
- Once dough has risen, divide into 6–7 equal portions and roll each into a ball. Oil your hands if needed to prevent sticking.
- Flatten each ball into a thin oval shape.
- Heat approx. 2–3 cm of oil in a deep frying pan to 175°C
- Carefully place one or two ovals into the oil at a time. Fry each side for about 1–2 minutes or until golden and bubbly.
- Transfer to a wire rack lined with paper towels to drain any excess oil.
Glaze & Serve
- Brush each warm fried dough with maple glaze.
- Optional: sprinkle with extra icing sugar for a sweet finish.
- Best served fresh and warm – trust us!
Tips & Variations
- Not a maple fan? Try cinnamon sugar, Nutella, or lemon & sugar instead!
- These are best eaten the day they’re made, but you can reheat them in the oven if needed.
