Lemon Crinkle Cookies

When life gives you lemons, bake these soft, zesty lemon crinkle cookies.

Ingredients:

  • 2 cups plain flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup butter, softened
  • 1 cup white sugar
  • 1 large egg
  • 2 tablespoons fresh lemon juice (use 4 tablespoons for a stronger lemon flavour – for an even bolder taste, add a few drops of lemon extract)
  • 1 teaspoon lemon zest
  • ½ teaspoon vanilla essence
  • A few drops of yellow food colouring (optional)

For Rolling:

  • ¼ cup white sugar
  • ¾ cup icing sugar

 

Instructions:

  1. Prepare the Dough: In a bowl, mix together the plain flour, baking soda, and salt. Set aside.

  2. In a separate large bowl (or a stand mixer), beat the softened butter and sugar until light and fluffy – about 2-3 minutes.

  3. Mix in the egg, lemon juice, lemon zest, vanilla essence, and food colouring (if using).

  4. Gradually add the dry ingredients, mixing until combined. Cover the dough and chill in the fridge for 2 hours.
